Iyokan Liqueur “Numa Shibori”
Connecting Setouchi Citrus Farming to the Next Generation
Iyokan, a native Japanese citrus cultivated since 1888, is known for its rich aroma and deep flavor. Yet in today’s consumer climate, where convenience is prioritized, its thick, hard-to-peel rind has led to a steady decline in production.
Inoue Orchard in Imabari, Ehime, cultivates Iyokan and other fruits without pesticides. In response to the decline in citrus consumption, the orchard has been revitalizing abandoned groves while also welcoming and supporting new farmers.
Using Iyokan from Inoue Orchard, a juice is produced through a unique pressing method that draws out not only sweetness but also the fruit’s characteristic bitterness. This juice is then blended with junmai sake and bottled directly at the brewery to create the liqueur “Numa Shibori.”
“Numa” refers to an old regional name once used for northern Ehime, including Imabari. By adopting a name rooted in the spirit of the land, this fruit liqueur embodies a commitment to revitalizing Setouchi agriculture and carrying forward sustainable farming practices into the future.
